Ingredients Tap to tick off

  • 2 lb bone-in chicken thighs or drumsticks
  • 1 1/2 lb baby potatoes, halved
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 2 lemons
  • 4 cloves garlic, smashed
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Method

  1. Heat the oven to 425°F.
  2. Toss the potatoes and onion with half the oil, salt and pepper on a large sheet pan.
  3. Rub the chicken with the remaining oil, the oregano and the zest of one lemon. Nestle it skin side up among the potatoes with the garlic and slices of the second lemon.
  4. Roast 35 to 40 minutes (drumsticks may need 5 more), until the chicken reads 165°F and the skin is crisp. Squeeze the zested lemon over everything before serving.
Chef's tipLeave space between the pieces on the pan. Crowded chicken and potatoes steam instead of browning, so use two pans if you scale the recipe up.

Keeps: 3 to 4 days in an airtight container in the fridge.
