  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 block firm tofu, cubed
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil

Method

  1. Rinse quinoa under cold water. In a pot, bring vegetable broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. Press tofu to remove excess water, then cut into cubes.
  3. Heat sesame oil in a large wok or skillet over medium-high heat. Add tofu and cook until golden brown on all sides.
  4. Add broccoli and bell pepper to the wok. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  5. Stir in the cooked quinoa and soy sauce. Toss everything together for 2 more minutes.
Chef's tipTop with toasted sesame seeds or sliced green onions for added crunch and healthy fats.
