  • 1/2 lb breakfast sausage
  • 8 large eggs
  • 1/4 cup milk
  • 1 tbsp butter
  • 1 cup shredded cheddar
  • 1/2 cup salsa
  • 4 large flour tortillas
  • 1/4 tsp salt

Method

  1. Brown the sausage in a skillet, breaking it up, then move it to a plate.
  2. Whisk the eggs, milk and salt. Melt the butter in the same skillet and scramble the eggs gently until just set.
  3. Fill each tortilla with eggs, sausage, cheese and a spoonful of salsa, then fold in the sides and roll up.
  4. Eat right away, or cool, wrap each in foil and freeze. Reheat from frozen at 375°F for 25 minutes, or unwrapped in the microwave for about 2 minutes.
Chef's tipLet the eggs and sausage cool completely before rolling and freezing. Steam trapped in a warm burrito turns into ice crystals and soggy tortillas.

Storing leftovers

Keeps: 4 days in the fridge.

Freezer: Freeze individually wrapped for up to 3 months.
