  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels
  • 1 1/2 cups shredded cheddar
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 4 large flour tortillas
  • 1 tbsp vegetable oil
  • 1/2 cup salsa

Method

  1. Mash the beans lightly with a fork and stir in the corn, chili powder and cumin.
  2. Spread the bean mixture over half of each tortilla, top with cheese and fold over.
  3. Cook in a lightly oiled skillet over medium heat for 2 to 3 minutes per side, until golden and the cheese has melted.
  4. Cut into wedges and serve with salsa.
Chef's tipCook over medium, not high, heat. The cheese needs time to melt before the tortilla burns.
