How to measure brown sugar
These weights are for packed brown sugar, pressed firmly into the cup until it holds its shape when tipped out. Loosely spooned brown sugar weighs closer to 150 g per cup.
All amounts use the US cup (236.6 mL). A Canadian, Australian or metric cup is 250 mL, about 6% larger; for baking, the gram weights are the safest choice wherever you live.

Cup weights depend on how an ingredient is measured and on the brand. These figures use common baking-reference averages; weighing on a scale removes the guesswork.
