What to use instead of 1 tbsp chopped fresh herbs

1
1 tsp dried herbs

Add dried herbs early in cooking; fresh ones at the end.

Best for: Soups, sauces, roasts

Chef's tipDelicate herbs like basil, parsley and cilantro lose the most when dried; rosemary, thyme and oregano dry well.

Substituting fresh produce

Fresh ingredients add brightness and aroma that dried or bottled versions only partly replace. Add dried or jarred substitutes earlier in cooking so their flavour has time to develop, and finish with a squeeze of lemon or a pinch of salt to wake the dish up.
