  • 2 cups cooked chicken, shredded
  • 4 cups chopped romaine lettuce
  • 1/3 cup Caesar dressing
  • 1/3 cup grated parmesan
  • 1 cup croutons, lightly crushed
  • 4 large flour tortillas

Method

  1. Toss the chicken, romaine, dressing and parmesan in a large bowl until evenly coated.
  2. Warm the tortillas for a few seconds in a dry skillet so they fold without cracking.
  3. Divide the filling between the tortillas, scatter over the croutons, fold in the sides and roll up tightly.
  4. Cut in half on the diagonal. Wrapped in foil, they keep well in a lunch bag for a few hours.
Chef's tipA rotisserie chicken from the store makes these a 10-minute lunch. One chicken gives about 3 cups of shredded meat.
