Measuring small amounts accurately
Small amounts of strong ingredients such as salt, baking soda and spices have a big effect, so measure them carefully with proper measuring spoons, levelled off. A "heaping" spoonful can hold nearly twice as much. For liquids, fill the spoon right to the brim over a small bowl rather than over your mixing bowl, in case it spills.
